Spice Maker Shams Al Qassabi began pickling lemons from her own backyard and now travels the world to select the highest quality ingredients for her spice blends.

Self-taught, she draws inspiration from traditional Qatari recipes handed down across generations. Shams’ heritage is reflected in every dish at her restaurant, Shay Al Shomous, the first woman-owned business in Doha’s Souk Waqif.
